The Food and Beverage staff at LochenHeath is one of the best restaurant teams assembled in Northern Michigan.  LochenHeath takes pride in offering a menu that caters to all tastes including delectable entrees, seafood, salads, vegetarian, vegan, and other healthy selections. LochenHeath is proud of the team's reputation and passion for culinary excellence.

Mike Dehring - Director of Food & Beverage

Mike was born and raised in Alpena, Michigan but left the state to travel the country.  Mike really discovered the love of the food and beverage industry while working in Yellowstone and Glacier National Parks.  To pursue his passion, he attended the Culinary Institute of America in Hyde Park, NY, becoming a level 1 and 2 sommelier and graduating with a bachelor's degree in Hospitality Management with a minor in Beverage Management.
 
After graduation, he moved to Washington D.C. to work for the Four-Season Hotel and Resort/Michael Mina's Bourbon Steak in Georgetown, where he honed his skills and learned to provide the 5 Star, 5 Diamond service as a server, bartender, and floor captain. His team won the award of Best Cocktail Program in all of Washington D.C., which was a major accomplishment.
 
He left Washington D.C for sunny Honolulu to open up two Michael Mina restaurants, StripSteak and The Street in the International Market Place. After both establishments were fully operational, he moved to the Big Island of Hawaii to work for a famous Mom and Pops all from scratch Italian restaurant.
 
Most recently he was a F&B manager at the private club, Moonlight Basin in Big Sky, MT., an 18-hole Jack Nicklaus course (2nd rated in Montana), and unbelievable ski in/ski out skiing/snowboarding in the winter.  At Moonlight Basin, he served 400+ members from all over the world. While there he was able to secure his first whiskey sommelier certification making him a Certified Bourbon Professional. He is currently working on his second level to become a Certified Whiskey Specialist. Mike is very excited to back in Michigan and to share his expertise and passion for the food & beverage industry with the Members at LochenHeath.

 

Peter Siagkris - Executive Chef

Chef Peter Siagkris is a Michigan-born, self-taught chef who cut his culinary teeth across the nation, from the Catskill Mountains to San Diego. During this time, he learned the importance of sourcing the freshest, local ingredients for his "from scratch" cuisine. After gaining 24 years of experience away from Michigan, Chef Peter found his place in Northern Michigan.  

He gained respect while working as executive chef at Leland’s Riverside Inn for the past seven years. He has been featured in several publications—Edible Grand Traverse, Michigan Blue, Hungry in Detroit, and Northern Express.  He has also participated in Chefs across the Great Lakes and Storm Cloud Chef Invitational events. 

Chef Peter’s passion for the bounty of local ingredients Northern Michigan farmers have to offer and his from scratch cooking style will provide our Members with an innovative dining experience, pleasing to their palates as well as their eyes. Chef Peter is looking forward to meeting our Member's culinary and dietary needs for this upcoming season and beyond.
